Baking

I love to bake, so today did I bake Wild Berry cheesecake for the first time


Ingredients:

Bottom:
225 g sweet oat biscuits
100 g butter

Filling:
1 packet lemon jelly powder
2.5 dl boiling water
3 cup light sour cream
200 g cream cheese
100 g of powdered sugar
1 teaspoon vanilla extract
3 cups heavy cream

Garnish:
300 g frozen berries
1 packet wild berry jelly powder 
1 pk wild berry jelly powder

Procedure:
Crush the biscuits in a mortar or crush them by having it in a bag and roll over. 
Mix the biscuit crumbs with melted butter.
Squeeze mixture over biscuits in a round cake tin.
Place the tin cold.

Dissolve lemon jelly powder in boiling water. 
Cool to it is cold, but still fluid.
Whisk together sour cream, cream cheese, powdered sugar and vanilla sugar.
Whip the cream stiff and whip the cream then into the filling.
Whip into cooled jelly.
Pour the filling into the baking tin  and let the cake cool in the refrigerator for a few hours.

Thaw the berries
Add the thawed berries on top of the solidified cheese mousse
Measure the juice from the thawed berries and dilute if necessary with water until you have 2.5 dl.
Boil this and have and add the berries jelly powder.
Stir until jelly powder has dissolved.
Cool the gel till its cold but still liquid.
Hell it so carefully in the mold so that forest berries are covered.
Put the cake back in the fridge until the jelly has set the lid.

Its a easy cake to make and its look really nice to and ofcourse do it taste amazing :)
